Chocolate chunk & sea salt cookies
These cookies don't need a lengthy excerpt.
You just need to know that you have to make them, immediately.
Ingredients
1.5 sticks (170 grams) unsalted butter, cold
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
1 tsp maple extract
1 large egg + 1 egg yolk
2 1/4 cup all purpose flour
1 1/2 tsp cornstarch
1 tsp baking soda
1/2 tsp table salt
1 1/2 cup semi sweet chocolate chips
1/2 cup chopped chocolate of choice
Sea salt
Preheat oven to 350 degrees Fahrenheit.
Line a cookie sheet with parchment paper and set aside.
Cut cold butter into cubes. In a stand mixer or using a handheld mixer, cream the butter until smooth. Next, add both brown sugar and granulated sugar, mixing again until incorporated.
Add in the egg and egg yolk, followed by vanilla and maple extract. Mix again until combined.
Add the flour, corn starch, baking soda, and salt into the wet mixture. Mix on low until just combined, do not over mix!
Add in 1 1/2 cups semi sweet chocolate chips, followed by half cup chocolate candy melts or any chopped chocolate bar will do! That's just what I had on hand. Mix on low just enough to distribute the chocolate.
No need to refrigerate- scoop the dough out with a medium sized cookie scoop. Placing the dough one inch apart on baking sheet. Bake the cookies for 16 minutes! It's just the right amount of time to be crispy outside and soft inside.
Lastly, add a few more chips to the top of the baked cookies, followed by a sprinkle of sea salt to each. Enjoy 🤍
