Double chocolate chip banana bread

You know how sometimes there's just too much chocolate? Yeah, me neither.


Ingredients:

3 brownish bananas

1 cup granulated sugar

1 stick or 8 tbsp butter (barely melted)

2 eggs

2 tsp vanilla extract

1 1/4 cup all purpose flour

1 cup cocoa powder

1 tsp baking soda

2 tsp instant espresso powder

1/2 tsp salt

1/2 cup semi sweet chocolate chips

1/2 cup darkchocolate chunks

** you can substitute the dark chocolate for semi sweet if you prefer, but I feel the dark chocolate gives a deeper flavor to the bread.


Preheat oven to 350 degrees Fahrenheit.

Line a loaf pan with parchment paper.


Start by mixing together the sugar and butter. Mix until you get a creamy consistency.

Next, add 3 bananas and mash with a fork. This leaves bigger chunks of banana instead of mashing it all up to nothing.

Add two eggs to the bowl along with vanilla extract and mix.


Add all of your dry ingredients to the wet ingredients in the bowl and mix until well combined.

Fold in your chocolate chips and chunks with a spatula.

Pour your batter into your parchment lined loaf pan. Bake the loaf for 30 to 45 minutes depending on the strength of your oven, when a toothpick comes out clean the banana bread is done.
