Easy Chantilly Cake
This won't be a long recipe. You probably think the title makes it sound complicated. And it kinda does. But listen to me, box-cake-mix. It's easy and tastes JUST as good, sometimes better. Just make a few tweaks. Go enjoy yourself the best cake you'll probably make,
Ingredients
For the cake
2 vanilla box cake mixes
Substitute water with whole milk
Add 2 Tbsp vanilla extract
Make & bake as directed!
Berry filling
Strawberry jam and fresh sliced berries
For the frosting
One 8 oz container of mascarpone cheese (room temp)
One 8oz block of cream cheese (room temp)
2 1/2 cups heavy whipping cream
2 cups powdered sugar
2 tsp vanilla extract
Preheat oven to 350 degrees Fahrenheit. Bake cakes in two 8 inch cake rounds until a toothpick comes out clean! 30-40 mins.
Let the cakes cool COMPLETELY. This is important for the frosting to stay on the cake. (I make the cakes a night before and place them wrapped in Saran Wrap in the fridge overnight.)
To make the frosting, use an electric or stand mixer with the paddle attachment.
Combine heavy cream, vanilla and 1 1/2 cups powdered sugar. Beat on med/high until stiff peaks form. It's basically homemade whipped cream! Once this is finished set aside.
In another bowl, combines both mascarpone and cream cheese with the remaining 1/2 cup of powdered sugar. Beat low until just combined and creamy. Do not overmix.
Back to our first bowl, add cheese mixture to our whipped cream mixture. Beating on low speed, gradually mixing to high speed until the mixture is thick & creamy.
To assemble cake
Cut cake top to make a flat top if it already isn't.
Spoon on a generous amount of the frosting and spread.
Add softened jam mixture to the center of the cake and spread leaving 2 inches to the edge of the cake. I pipe a thick layer of frosting on the edge of the cake to create a barrier! On top of the jam add your sliced berry pieces.
Add second cake layer, frosting top and sides. Frost this cake until your hearts content! It doesn't need to be perfect. It won't be, but it will absolutely taste like perfection. Keep stored in the fridge until cake is completely devoured 😋 💛🍓
