I wanted to share my gingerbread cookie recipe just in time for you to bake cookies with your little & loved ones.
Ingredients:
1 cup butter softened (2 sticks)
1 large egg
1 cup dark or light molasses (not blackstrap molasses)
2 TBSP white vinegar
5 cups all purpose flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup sugar
2 tsp ginger
1 tsp cinnamon
1 tsp cloves
Add butter and sugar to a large bowl & mix together until light and fluffy. Next, add egg, molasses & vinegar. Beat until well combined. Add your flour, baking soda, salt, spices and mix until a dough forms. The dough will be a little sticky, that is ok! Wrap the dough in plastic and place in the fridge for 30-60 minutes, this helps the cookies keep their shape. Once the dough has chilled, preheat your oven to 350 F. Roll your dough out on a well floured surface, sprinkling with flour as needed if the dough is too sticky. Cut out with your favorite cookie cutters and bake on parchment paper for 9-11 minutes.
Yields about 30 gingerbread men.
