Peanut butter butterscotch Blondies


  • 1/2 cup melted butter

  • 1/2 cup smooth peanut butter

  • 1 cup + 2 tablespoons brown sugar

  • 1 egg + 1 egg yolk

  • 1 tsp vanilla extract

  • 1 1/4cups all-purpose flour

  • 1/4 tsp salt

  • 1/2 teaspoon baking powder

  • 1/2 cup butterscotch chips

  • 1 giant sized Reese’s peanut butter bar

Preheat oven to 350 degrees.

In a large bowl or stand mixer, whisk together melted butter, brown sugar, peanut butter, vanilla and eggs until well combined.

Next add in your dry ingredients to the wet mixture. Mix them in until you have a smooth consistency. Fold in the butterscotch chips.

Pour the mixture into a parchment lined baking pan, 8x8 works best!

Bake the Blondies 25-30 mins or until a toothpick comes out clean. Remove from the oven and let cool 15 minutes.

Break the Reese’s bar squares evenly and place the squares on top of the Blondies in rows. Sprinkle with sea salt and enjoy!
