Triple berry cake with lemon glaze
Raise your hand if you can prepare box cake mix with your eyes closed. This ’recipe’ takes just a few minutes to throw together. I say ‘recipe’, because this uses a box cake mix for the base with a few substitutions. It’s so easy & quick, and that’s what some of us need these days! And the cake comes out so good, you wouldn’t know it came from a box! it’ll be our secret. Recipe below, enjoy!
ingredients:
1 box vanilla or yellow cake mix. (substitute oil measurement for butter & substitute the water measurement for milk)
4 eggs (yes 4 eggs)
1/2 cup mixed berries - all berries welcome!
4 tbsp powdered sugar
1 tbsp lemon juice
2 tsp lemon zest
preheat oven to 350 degrees. line your loaf pan with parchment paper and nonstick spray. follow the directions on the back of the cake box to prepare. sub butter for oil, milk for water & add in your extra egg. This makes the cake much more rich!
stir in your fresh or slightly frozen berry mixture to the batter.
bake your cake until a toothpick from the middle comes out clean.
set cake out to cool. next - to make your lemon glaze, mix together the powdered sugar and lemon juice. You can add more powdered sugar or more lemon juice depending on the consistency you want your glaze to be.
Drizzle over your slightly cooled cake.
lastly, sprinkle your lemon zest over the top.
