Vanilla Espresso Banana Bread

Sweet Vanilla. Overripe bananas. Cinnamon & espresso.

Ingredients

1 stick of butter or 8 Tbsp

1 cup granulated sugar

2 eggs

3 mashed browning bananas (the darker the better)

1 Tbsp vanilla extract

1 tsp baking soda

1 1/4 cup all purpose flour

1/2 tsp salt

2 tsp espresso powder



Preheat oven to 350 degrees Fahrenheit.


Melt your butter slightly in a microwave safe bowl. In a separate bowl, combine sugar with butter and whisk together. Add your 2 eggs, making sure the butter isn't hot (we don't want scrambled eggs, right?)


Whisk eggs into butter and sugar mixture for two minutes rigorously, this is going to give you the crispy top. Add 3 peeled bananas to the bowl and mix with a spatula to break up bananas, still leaving some banana chunks. Add the vanilla extract and mix once again.


Next, add all of your dry ingredients. Fold all of these ingredients together until you get a batter like consistency.


Line your loaf pan with parchment paper. Pour your batter into the pan, dashing cinnamon on top if you want - which you do want.


Bake the bread for 45-55 minutes depending on your oven.

Insert a toothpick, once a toothpick comes out clean, your bread is done!

Also - this is best served hot right out of the oven.
